Homemade Gluten-Free Pesto

I just finished posting a pair of my favorite gluten-free recipes online at my free recipe library site - a homemade Gluten-Free Sun-Dried-Tomato Pesto Recipe (as pictured above) and a Gluten-Free Pesto Chicken Parmesan Recipe (pictured below) which puts that homemade pesto to use in a delicious combination of chicken, pesto, and cheese.

I love pesto! I enjoy the traditional / standard basil, garlic, olive oil, and pine-nuts variety quite a bit. And, I also like extensions on this theme; by adding ingredients like Onions and Sun-Dried Tomatoes to the pesto, simple and versatile flavorful variations arise and present new opportunity for further derivative-recipe experimentation - like the enhanced Chicken Parmesan recipe.

This pair of recipes formed the centerpiece of our Thanksgiving dinner this year. We decided to skip the traditional turkey and serve up something a bit different for the event. Since we were only serving a small number of people, cooking an entire turkey (or even a turkey breast) was just more than we wanted to deal with. So, pesto and chicken Parmesan it was - and a great success it was too! These recipes were definitely a hit with everyone that has tried them.

One thing I really like about pesto is how incredibly versatile they are, and how pesto can easily add flavor and excitement to all sorts of dishes. We make a fairly good sized batch of pesto at a time (as shown in the glass dish above), so I nearly always have leftovers for other creations. I put pesto on my gluten-free pasta, potatoes, tortillas, baked celeriac (celery root - I have a recipe coming for this soon too), and many other items in my gluten-free diet. It is just a wonderful addition to so many recipes.

Do you by chance, know of any quality online food services? I am starting to order all my food online because of various reasons. (Health being one of them) So far I have found 2 services, Fresh Dining (an LA company) and Celebrity Foods, but you have to call them so they can talk to you about your need. I would really like any suggestions that you may have, so I can widen my list of quality places online where I can order healthy food from.

I don't order much in the way of prepared food online. But, I do use Amazon.com to get various baking ingredients, as well as other online retailers that carry gluten-free items. Wish I had more experience with that, but I (or my wife) tend to bake much of our food from scratch at home.

Thanks for the comments on the Gluten-Free Chocolate Cake. I appreciate it.

That particular recipe variation you are talking about is in my book. Although I post quite a few free recipes on this blog and our book website also, that particular recipe is one of the reasons people buy the book - the cake is as good as it looks!

If you call only putting that recipe in the book "withholding the recipe" (by not just posting it online), I guess I am. After all, I need some reason for people to actually purchase the book (which by the way is satisfaction guaranteed) if I am ever to get this pile of books I had printed out of here. I don't advertise or sell at Amazon or Borders or anything, so my online sales are the only way to ever move these books, and the great recipes are the reason people buy the book.

I guarantee that chocolate cake would have been a hit with your sister, but unfortunately, even if you were to order the book today, I doubt it could make it there for your weekend without costing some ridiculous amount to ship it FedEx or something. And, you will also want to allow time to make sure you have all the ingredients ready too. So, unfortunately the cake may have to wait til another future event.

By any chance, are you anywhere near Cleveland, Ohio? If so, I could deliver one to you myself if within an hour of here (as well as the ingredients you'd need). Also, I have friends in a couple other cities that could help perhaps. That's the best I can do on short notice right now.
