Award-Winning Gluten-Free Carrot Cake

This excellent cake is features in our Gluten-Free Gourmet Desserts cookbook. My wife created this recipe which is truly indistinguishable from the “real” thing, and this carrot cake won first place honors at our city cake-baking competition in 2005!
