Oats update, recipe variation post, and more.

For anyone that is interested in knowing how the gluten-free oats consumption is going, I thought it was a good time to provide an update. I have been eating the certified gluten-free oats for breakfast every few days now. I started with a quarter-cup uncooked, and worked up to 1/2 cup uncooked at a time now. I have consumed them a total of 4 times now. In general, I did not notice any particular issues. But, today, whether coincidentally or not, I have had these stabbing pains in my upper-stomach area (just below my sternum) on and off all day, and the pain is worse when I take a deep breath or lean backwards and stretch my mid-section.

I have not had problems with the Oats thus far, and I really have no idea if the pains are from my body not taking well to the oats today, or if it is from the post-Thanksgiving over-consumption routine :) So, not quite sure what to make of things. I will still have the oats again over the next few weeks I am certain, and I will see if any pattern emerges. I'd say there is a good chance I ate something else that I should not have recently. Time will tell.

Aside from that, I had a reader who tried our Artisan Style Gluten-Free Multi-Grain Bread send me an email message to tell us how wonderful and "awesome" the bread was! Needless to say, we are thrilled whenever someone thoroughly enjoys our recipes. The reader also sent me information about how she adapted the recipe to a dairy-free (and even egg-free) variation. See the comments under the above link -- I posted her variation description there, and I will (sooner or later) post it on the book-site.

Hope everyone had a great Thanksgiving - gluten-free and wheat-free of course! And, I hope to have more time to get back to writing new blog entries over the coming weeks. I have a few recipes I really want to get out for Christmas season, including a Panettone Bread (my daughter's creation), and some other nice recipes.

  1. Are you sure it isn't a reflux issue. Just a thought. Once a quinoa hater I am into it now. I made bread with a cup of quinoa flour and it is wonderful.

  2. I do not think it is reflux. If so, I have no acid buildup that I am aware of. Got me. It's better today, so I'll make sure I am back to "normal" and then try some more of my GF oats. Only if I repeatedly have issues would I drop them from the diet. I try to not eliminate anything on first pseudo-correlated issue, since that is anything but a scientific way to determine what really caused a problem.

    I too love Quinoa -- great stuff! It's amazing how, prior to going GF, I never heard of all these wonderful grains. I think a lot of non glutenfree/celiac persons are really missing out on some great foods.

You know, I have noticed over the past couple of months (since the Celiac symptoms have hit me hard and after the diet began) that if I get either too hungry or too full I have intense stomache pain just under my ribs. Thanksgiving dinner killed me. Nothing bad in the food, just WAY too much of it. Mostly this happens if I don't eat. Goes away once I eat anything. Doesn't matter if I eat mild or spicy foods, any food helps.

    I've been eat products with oats for a while now and haven't had any issues. I haven't been as disciplined as you have with the GF oats, I eat Puffins. Every year I have the various blood tests to make sure I'm not getting gluten in some fashion that I'm not noticing.

    Actually, though I have not mentioned it explicitly on here, I too have been eating some Puffins on and off. They were may favorite cereal before going GF, and since the only potentially "unsafe" thing in them is the Oats (cross-contamination potential since not "certified GF"), I took the chance a couple weeks ago and started eating them.

    I have not noticed anything particularly odd or such, so I think they are OK for me. But, I am eating them in moderation just in case. I could probably eat a box full in one sitting if I was truly unrestrained :)

    Glad to hear the oats are working out well for you Rob. Oats truly are an awesome grain that, if possible, should be in our diets imho.
